Serves 4

Ingredients

  • 4 large chicken breasts
  • 1 ½ pounds green beans, trimmed
  • 2 garlic cloves, crushed
  • 1 tablespoon honey
  • Juice and zest from 1 lemon
  • 3 tablespoons olive oil
  • salt and pepper, to taste

Method

  1. Preheat the oven to 400 degrees F.
  2. Combine all ingredients except the chicken and beans in a shallow dish and mix to combine.
  3. Add the chicken and toss to coat it evenly. Marinate the chicken in the fridge for approximately 2 hours.
  4. Remove the chicken from the marinade and place on a greased or lined roasting tray. Arrange the green beans alongside the chicken
  5. Bake in preheated oven for 25 to 35 minutes, or until cooked through. Cooking time will depend on the size of the chicken breasts.
  6. Remove from the oven and serve.
