Serves 4

Ingredients

  • 4 chicken thighs
  • 1 pound asparagus , trimmed ends
  • 3 tablespoons ghee or olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Method

  1. Season chicken thighs with salt and pepper. Melt 2 tablespoons of ghee or olive oil in a large pan over medium to high heat. Stir in garlic and herbs and cook for a few more minutes, until the garlic is fragrant.
  2. Add chicken to pan, and cook for 5 to 8 minutes, then flip over and cook for another 5 to 8 minutes.
  3. Add the remaining 1 tablespoon of ghee or olive oil to the pan. Add asparagus. Cook for another 5 to 10 minutes, until tender and the chicken is completely cooked through.
  4. Serve.
