Ingredients

  • 2 eggs, preferably organic
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon good quality salt
  • 2 cups extra virgin olive oil, avocado oil or cold pressed macadamia nut oil

Method

  1. Place all ingredients except oil into a blender and process until combined. With the motor running, drizzle the oil in extremely slowly. It is important to do it slowly so that the mayonnaise thickens properly.
  2. Place the mayonnaise into a glass jar and store it in the fridge for up to 2 weeks.
