Lamb Cutlets With Peach Salad
This lamb cutlet and peach salad recipe is a perfect lunch or dinner meal. The lamb is packed with protein and the salad is full of fiber, antioxidants, vitamins and minerals.

Ingredients
- 12 lamb cutlets
- 1 tsp cumin seeds, crushed
- Salt and pepper, to taste
- 1/3 cup olive oil
- 2 peaches, sliced into wedges
- 1 tbsp balsamic vinegar
- 4 handfuls arugula leaves, roughly chopped
- ½ cup cubed goat fetta cheese
- ½ cup pecans
Method
- Combine the lamb cutlets with the cumin and 1 tablespoon of the olive oil. Season with salt and pepper.
- Cook the lamb cutlets on a frying pan or barbecue until they are cooked to your liking.
- Cook the peach wedges in the frying pan or grill for approximately 2 minutes on each side.
- Arrange the peaches on serving plates. Top the peaches with the remaining salad ingredients and then place the lamb cutlets on the plates and serve.
