Lemon and Coconut Slice
A gluten and dairy free sweet treat that’s delicious.
Ingredients
- 1.5 cups fresh medjool dates
- 1 cup almonds
- 1.5 cups unsweetened shredded coconut
- 3 tablespoons lemon juice
- 2 teaspoons grated lemon zest
Method
- Place the almonds in a food processor and process until fine like almond meal.
- Add all other ingredients except the coconut and process until combined.
- Remove the mixture from the food processor and mix the shredded coconut in well with your hands.
You can shape the mixture into balls or bars. Refrigerate in an airtight container.
