Ingredients

  • 1 tablespoon of salt
  • 2 tablespoons finely grated lemon zest
  • 4 tablespoons chopped fresh oregano leaves
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons olive oil or animal fat
  • One 4 to 5 pound leg of lamb

Method

  1. Preheat oven to 300 degrees F. Mix all ingredients together except the lamb.
  2. Make shallow cuts in  the meat approximately 1/2 inch apart. Rub the paste all over the meat, taking extra care to get it deeply into the cuts you made.
  3. Place the lamb  in a baking dish with a lid.
  4. The lamb will need approximately 4 hours to cook. It depends on the size of the lamb, how your oven functions, and how well done you like your meat.
  5. Serve with a salad or roasted vegetables.
