Lemon and Oregano Roast Lamb
Ingredients
- 1 tablespoon of salt
- 2 tablespoons finely grated lemon zest
- 4 tablespoons chopped fresh oregano leaves
- 2 tablespoons fresh lemon juice
- 3 tablespoons olive oil or animal fat
- One 4 to 5 pound leg of lamb
Method
- Preheat oven to 300 degrees F. Mix all ingredients together except the lamb.
- Make shallow cuts in the meat approximately 1/2 inch apart. Rub the paste all over the meat, taking extra care to get it deeply into the cuts you made.
- Place the lamb in a baking dish with a lid.
- The lamb will need approximately 4 hours to cook. It depends on the size of the lamb, how your oven functions, and how well done you like your meat.
- Serve with a salad or roasted vegetables.
