Low Carb Chilli Chicken
Serves 4
Ingredients
- 1 pound chicken pieces (approximately 1 inch sized)
- 2 tablespoons olive oil or ghee or animal fat
- 2 teaspoons dried oregano
- 1 red chili pepper, sliced
- 4 minced garlic cloves
- 2 cups chopped cauliflower florets
- 2 cups spinach leaves
- ¼ cup coconut cream
- Salt and pepper, to taste
Method
- Heat the oil or other fat in a large saucepan over medium heat. Add the chopped chicken pieces, oregano, garlic, salt and pepper.
- Cook while stirring until the chicken is cooked through.
- Add all remaining ingredients and cook until the cauliflower has cooked to your liking.
- Serve.
