Serves 4

Ingredients

  • 1 pound chicken pieces (approximately 1 inch sized)
  • 2 tablespoons olive oil or ghee or animal fat
  • 2 teaspoons dried oregano
  • 1 red chili pepper, sliced
  • 4 minced garlic cloves
  • 2 cups chopped cauliflower florets
  • 2 cups spinach leaves
  • ¼ cup coconut cream
  • Salt and pepper, to taste

Method

  1. Heat the oil or other fat in a large saucepan over medium heat. Add the chopped chicken pieces, oregano, garlic, salt and pepper.
  2. Cook while stirring until the chicken is cooked through.
  3. Add all remaining ingredients and cook until the cauliflower has cooked to your liking.
  4. Serve.
