Low Carb Coconut Porridge

Ingredients
- 1 tablespoon coconut flour
- 1 tablespoon almond meal
- 1 egg, lightly whisked
- 4 tablespoons coconut cream (just the solid part from a can of coconut cream)
- ½ cup fresh or frozen berries of your choice
- 1 teaspoon Nature Sweet natural sugar alternative
Method
- Place all ingredients except berries into a pan and cook very slowly over low heat, stirring constantly. It needs to be cooked slowly, otherwise the egg will scramble.
- Once cooked, stir berries into the mixture.
- Pour into a bowl and serve with coconut milk or nut milk.
