Serves 4

Ingredients

  • 4 pork chops
  • ⅓ cup almond meal/flour
  • ⅓ cup finely grated Parmesan cheese
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1 large egg, whisked
  • 3 tablespoons olive oil or ghee

Method

  1. Pat the pork chops dry with paper towels.
  2. In a shallow bowl, mix the almond meal, Parmesan, parsley, garlic and salt. Place the egg into another shallow bowl.
  3. Dip each pork chop into the egg to coat both sides, then coat the pork with the dry mixture on both sides.
  4. Add the oil or ghee to a large skillet and set over medium high heat. Fry the pork chops on each side until cooked through.
  5. Serve with a salad or cooked vegetables.
