Classic lamb stew is loaded with hearty, healthy ingredients and this recipe is no shortage of that! A wonderful dinner for chilly nights and sure to satisfy.

Ingredients

  • 2 lb lamb meat, cut into cubes
  • 4 medium carrots, sliced
  • 1 broccoli head, cut into florets
  • 1 red pepper (capsicum), diced
  • ½ cup chopped pumpkin
  • 1 onion brown, diced
  • 2 garlic cloves minced
  • 1 tsp dried thyme
  • 2 cups beef  or vegetable stock
  • 4 tbsp olive oil, ghee or tallow
  • Salt and pepper, to taste

Method

  1. Heat a large saucepan over medium to high heat, and melt the cooking oil or fat.
  2. Brown the lamb pieces in the saucepan for around 1 minute each side, then set aside.
  3. Add carrots, onions, and garlic, and cook for a couple of minutes until the onions begin to soften.
  4. Add the thyme, pumpkin, broccoli, and pepper (capsicum), and pour in the stock. Add salt and pepper.
  5. Add the lamb back to the saucepan, lower the heat to medium, cover, and cook for 30 to 40 minutes.
  6. Serve.
