Serves 4

Ingredients

  • 4 turkey breasts
  • ½ cup lemon juice
  • ¼ cup tahini
  • 2 tablespoons dijon mustard
  • Salt and pepper to taste
  • Extra virgin olive oil, ghee, or duck fat for cooking turkey

Method

  1. Heat oil or fat in a frying pan over medium heat.  Season the turkey with salt and pepper.
  2. Place turkey in frying pan and cook for a few minutes.
  3. Combine all other ingredients together in a bowl.  Turn turkey over, pour sauce into the frying pan, reduce heat to low and cover the pan with a lid.
  4. Cook for approximately 20 minutes, or until the turkey is well cooked through.
