Pork with apples is a classic combination and a great way to utilize apples in a savory dish. Great for a lunch or dinner meal and served with a light salad.

Makes 6 skewers

Ingredients

  • 1 ½ lb pork, cut into bit sized cubes
  • 1 green apple, cut into one inch cubes or in slices
  • 1 red pepper (capsicum), cut into bite sized pieces
  • 1 small red onion, cut into 1 inch pieces (optional)
  • ¼ cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 1/3 cup balsamic vinegar
  • Salt and pepper, to taste
  • 6 skewers

 

Method

  • Place the lime juice, olive oil, vinegar, salt and pepper into a glass bowl.
  • Add the cubed pork and allow it to marinate in the fridge for 2 hours.
  • Preheat the grill or BBQ to medium heat.
  • Skewer the meat, apple and pepper onto the skewers. Place on the grill or BBQ and cook for approximately 5 minutes each side, or until cooked through.

Serve with a salad.
