Pork and Apple Skewers
Pork with apples is a classic combination and a great way to utilize apples in a savory dish. Great for a lunch or dinner meal and served with a light salad.
Makes 6 skewers
Ingredients
- 1 ½ lb pork, cut into bit sized cubes
- 1 green apple, cut into one inch cubes or in slices
- 1 red pepper (capsicum), cut into bite sized pieces
- 1 small red onion, cut into 1 inch pieces (optional)
- ¼ cup freshly squeezed lime juice
- 2 tablespoons olive oil
- 1/3 cup balsamic vinegar
- Salt and pepper, to taste
- 6 skewers
Method
- Place the lime juice, olive oil, vinegar, salt and pepper into a glass bowl.
- Add the cubed pork and allow it to marinate in the fridge for 2 hours.
- Preheat the grill or BBQ to medium heat.
- Skewer the meat, apple and pepper onto the skewers. Place on the grill or BBQ and cook for approximately 5 minutes each side, or until cooked through.
Serve with a salad.
