2 medium beets (beetroot), peeled 1 large carrot, peeled 1 handful parsley, chopped ¼ cup sunflower seeds 2 tablespoons lemon juice 1 tablespoon olive oil 2 tablespoons wine vinegar 1 tablespoon wholegrain mustard 2 stalks celery, chopped Grate the beets and carrot either with a grater or food processor.  Place all salad ingredients into a bowl and mix thoroughly.  Serve
