Raw Carrot And Almond Salad
Ingredients
- 5 large carrots, shredded coarsely
- ¼ shredded beet (optional)
- 1 large handful flaked almonds
- 1 bunch fresh parsley or cilantro, finely chopped
- 4 tablespoons hemp seeds
- ¼ cup fresh lemon juice
- ¼ cup olive oil
- Salt and pepper, to taste
Method
- Toast the almonds in the oven first, until they are lightly golden brown and fragrant.
- Mix all the ingredients in a bowl except olive oil and lemon juice.
- Drizzle salad with the oil and lemon juice and serve.
