Ingredients

  • 5 large carrots, shredded coarsely
  • ¼ shredded beet (optional)
  • 1 large handful flaked almonds
  • 1 bunch fresh parsley or cilantro, finely chopped
  • 4 tablespoons hemp seeds
  • ¼ cup fresh lemon juice
  • ¼ cup olive oil
  • Salt and pepper, to taste

Method

  1. Toast the almonds in the oven first, until they are lightly golden brown and fragrant.
  2. Mix all the ingredients in a bowl except olive oil and lemon juice.
  3. Drizzle salad with the oil and lemon juice and serve.
