Raw hazelnut bars
These make a delicious after dinner treat or a handy snack.
1½ cups cashews
1 cup pitted dates. Soak in water for 2 hours, then drain and discard liquid.
½ cup hazelnut butter
½ cup hazelnut meal (flour)
½ cup unsweetened flaked coconut
1 tablespoon hemp seeds
¼ cup melted coconut oil
Place all ingredients into a food processor and process until the nuts are ground and the mixture comes together. If you need more moisture add some coconut oil. If the mixture is too wet, add more hazelnut flour.
Form mixture into bars and store in the fridge.
