Ingredients

  • 1 cup almond flour/almond meal
  • 8 fresh Medjool dates, pitted
  • ½ teaspoon vanilla extract
  • A pinch of cinnamon

Method

  1. Place all ingredients into a food processor or high powered blender. Blend until well combined and the mixture reaches a dough-like consistency. If it's too dry, add some water. The texture will depend on the moisture content of the dates you use.
  2. Remove the mixture and shape it into cookie shapes. Refrigerate before serving.
