Refined Sugar Free Almond & Date Cookies
Ingredients
- 1 cup almond flour/almond meal
- 8 fresh Medjool dates, pitted
- ½ teaspoon vanilla extract
- A pinch of cinnamon
Method
- Place all ingredients into a food processor or high powered blender. Blend until well combined and the mixture reaches a dough-like consistency. If it's too dry, add some water. The texture will depend on the moisture content of the dates you use.
- Remove the mixture and shape it into cookie shapes. Refrigerate before serving.
