Refreshing Cucumber Salad
This refreshing cucumber salad is so quick and easy to throw together, and perfect for lunch on a warm day when served with protein.
- 2 Lebanese cucumbers, thinly sliced
- ¼ red onion, thinly sliced
- 1 large carrot, roughly grated
- ½ cup cherry tomatoes, halved
- 2 tbsp finely chopped fresh dill leaves
- 2 tbsp each of apple cider vinegar and olive oil, for dressing
- Combine all salad ingredients in a serving bowl. Drizzle with olive oil and vinegar, toss and serve.
