This refreshing cucumber salad is so quick and easy to throw together, and perfect for lunch on a warm day when served with protein.

Serves 2


  • 2 Lebanese cucumbers, thinly sliced
  • ¼ red onion, thinly sliced
  • 1 large carrot, roughly grated
  • ½ cup cherry tomatoes, halved
  • 2 tbsp finely chopped fresh dill leaves
  • 2 tbsp each of apple cider vinegar and olive oil, for dressing


  1. Combine all salad ingredients in a serving bowl. Drizzle with olive oil and vinegar, toss and serve.
