This tasty salad recipe is light, flavorful and only takes 5-10 minutes to prepare.

Serves 4 as a side salad

Ingredients

  • 8 large very ripe tomatoes, sliced
  • 1 medium red onion, thinly sliced
  • ½ cup fresh mint leaves, torn
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper, to taste

Method

  1. Arrange first 3 ingredients together on serving plates.
  2. Whisk oil and vinegar together well in a bowl. Drizzle over salad, sprinkle with salt and pepper and serve.
