Refreshing Tomato And Mint Salad
This tasty salad recipe is light, flavorful and only takes 5-10 minutes to prepare.
Serves 4 as a side salad
Ingredients
- 8 large very ripe tomatoes, sliced
- 1 medium red onion, thinly sliced
- ½ cup fresh mint leaves, torn
- ¼ cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper, to taste
Method
- Arrange first 3 ingredients together on serving plates.
- Whisk oil and vinegar together well in a bowl. Drizzle over salad, sprinkle with salt and pepper and serve.
