Serves 2 2 chicken breasts, sliced in half 2 cloves garlic, minced 2 tablespoon lemon juice and grated rind from half a lemon 1 tablespoon olive oil or ghee ½ teaspoon dried oregano Heat the oil or ghee in a large pan over medium heat. Add the minced garlic, lemon juice and rind. Place the chicken pieces in the pan and sprinkle with oregano. Cover the pan with a lid and leave to cook for approximately five minutes. Turn the chicken pieces over and continue cooking until all pieces are cooked through. Serve with steamed or roasted vegetables or a salad.
