This is a delicious low carbohydrate dinner for cool evenings.

Ingredients

  • 2 lamb shanks
  • 1 cup beef or vegetable stock
  • 1 brown onion, chopped
  • 3 cloves garlic, finely minced
  • 1 tablespoon pastured ghee or olive oil
  • 4 sprigs fresh rosemary, finely diced
  • Salt and pepper, to taste

Method

  1. Season the lamb with salt and pepper. Heat the ghee or oil in a skillet over medium heat and sear the shanks evenly on all sides until lightly browned.
  2. Place the shanks into a crock pot or slow cooker. Place the onion, garlic and rosemary into the skillet and sauté until softened.
  3. Place all remaining ingredients into the crock pot and slow cook for 4 hours on a low heat.
  4. Serve with vegetables or salad.
