Ingredients

  • 1 large head of cauliflower , cut into florets
  • 2 garlic cloves , crushed
  • 3 tablespoons extra virgin olive oil
  • 1.5 teaspoons chipotle powder or sweet paprika if you don't want heat
  • Salt and pepper to your liking
  • 1 tablespoon fresh lime juice
  • 1 tablespoon fresh chives, finely chopped

Method

  1. Preheat oven to 390°F.
  2. Place cauliflower in a large bowl. Drizzle the oil on top and then rub the oil and garlic into the cauliflower florets with your hands.
  3. Sprinkle with chipotle or paprika, and then salt and pepper.
  4. Spread the cauliflower out on an oven tray. Bake for 25 minutes, tossing once, until the cauliflower is cooked to your liking.
  5. Remove from oven and then drizzle with lime juice and sprinkle chopped chives on top.
