Spicy Roasted Cauliflower
Ingredients
- 1 large head of cauliflower , cut into florets
- 2 garlic cloves , crushed
- 3 tablespoons extra virgin olive oil
- 1.5 teaspoons chipotle powder or sweet paprika if you don't want heat
- Salt and pepper to your liking
- 1 tablespoon fresh lime juice
- 1 tablespoon fresh chives, finely chopped
Method
- Preheat oven to 390°F.
- Place cauliflower in a large bowl. Drizzle the oil on top and then rub the oil and garlic into the cauliflower florets with your hands.
- Sprinkle with chipotle or paprika, and then salt and pepper.
- Spread the cauliflower out on an oven tray. Bake for 25 minutes, tossing once, until the cauliflower is cooked to your liking.
- Remove from oven and then drizzle with lime juice and sprinkle chopped chives on top.
