Stuffed Peppers
This makes a lovely breakfast or dinner.
Serves 4
Ingredients
- 4 bell peppers, core and seeds removed
- 8 eggs, beaten
- 1 cup diced fresh mushrooms
- 1 red onion, diced
- ½ cup cherry tomatoes, halved
- 1 large carrot, coarsely grated
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Method
- Preheat the oven to 375ºF.
- Sauté the onion in the olive oil until softened. Add the mushrooms, tomatoes and carrot and continue sautéing until cooked. Add salt, pepper and oregano.
- Place mixture inside peppers and then pour beaten egg mixture evenly into the 4 peppers.
- Place the peppers onto a greased baking tray and bake for approximately 40 minutes.
