Sugar Free Beef Ginger Stir Fry
Serves 2
If you are not a ginger fan, you can omit it.
Ingredients
- 8 oz steak, cut in strips
- 1 diced brown onion
- 1 – 2 cloves crushed garlic
- 2 diced very ripe tomatoes
- 1 tsp ground ginger
- 4 tablespoons apple cider vinegar
- salt and pepper, to taste
- 1 tablespoon olive oil
Directions:
- Place the oil in a large skillet and brown the steaks over medium heat. Add the onion, garlic, and tomatoes.
- In a bowl, combine the ginger, salt and pepper with the vinegar. Add that mixture to the skillet, stirring to combine.
- Place a lid on the skillet, turn the heat to low, and let the mixture simmer until the liquids evaporate.
- Serve with brown rice.
