If you are not a ginger fan, you can omit it.

Ingredients

  • 8 oz steak, cut in strips
  • 1 diced brown onion
  • 1 – 2 cloves crushed garlic
  • 2 diced very ripe tomatoes
  • 1 tsp ground ginger
  • 4 tablespoons apple cider vinegar
  • salt and pepper, to taste
  • 1 tablespoon olive oil

Directions:

  1. Place the oil in a large skillet and brown the steaks over medium heat. Add the onion, garlic, and tomatoes.
  2. In a bowl, combine the ginger, salt and pepper with the vinegar. Add that mixture to the skillet, stirring to combine.
  3. Place a lid on the skillet, turn the heat to low, and let the mixture simmer until the liquids evaporate.
  4. Serve with brown rice.
