Ingredients

  • One 15 oz can of black beans, drained and rinsed
  • ⅓ cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1.5 tablespoons Nature Sweet natural sweetener
  • ¼ cup cocoa or cacao powder
  • ½ teaspoon baking powder
  • 2 large eggs
  • ¾ cup sugar free chocolate chips, or chopped roasted walnuts

Method

  1. Preheat the oven to 350 degrees F. Grease an 8×8 inch baking pan.
  2. Put the beans and coconut oil into a food processor or high powered blender and blend until well combined.
  3. Add the remaining ingredients except the chocolate chips or pecans and blend until smooth.
  4. Mix the chocolate chips or pecans in by hand.
  5. Pour mixture into the  greased 8×8-inch pan and bake for 20 to 25 minutes or until the top is set and a toothpick comes out with some moist crumbs attached.
  6. Let the brownie cool before removing from the pan and slicing.
