This is a delicious and filling lunch

Ingredients

  • 1 ½ cups diced sweet potato
  • ½ red onion, sliced
  • ½ spinach
  • 1 teaspoon dried oregano
  • ⅓ cup diced feta cheese
  • 6 eggs, whisked
  • Salt and pepper, to taste
  • Fat of your choice for cooking (olive oil, ghee, coconut oil or animal fat)

Method

  1. Place the sweet potato and sliced onion on a greased or lined oven tray. Sprinkle with dried oregano and drizzle with oil or fat of choice.
  2. Roast in the oven until soft and golden.
  3. Heat some oil or fat in a pan on the stove to cook the omelette. Place all ingredients except eggs and cheese into the pan. Pour the whisked eggs over the mixture, making sure it is all covered evenly. Sprinkle cheese on top. Cook for approximately 5 minutes, or until the egg is set. Covering the pan with a lid will speed up the cooking process.
