These brownies are a nice, quick treat for all to enjoy and loaded with fiber!
Ingredients
2½ cups grated orange sweet potato
2 eggs, whisked
Approximately 10 drops liquid stevia
½ cup melted ghee or coconut oil
½ cup cacao or cocoa powder
1 teaspoon vanilla extract
1 teaspoon bicarb soda
1 teaspoon baking powder
3 tablespoons almond meal
1/3 cup dried cranberries
¼ cup toasted slivered almonds
Method
Preheat the oven to 365ºF.
Combine the grated sweet potato, eggs, stevia and melted ghee or coconut oil in a large bowl.
Add all remaining ingredients except the cranberries and almonds. Stir well.
Stir in the cranberries and almonds and pour mixture into a lined or greased baking tin. Bake for approximately 25 to 30 minutes. Cooking time will depend on your oven and also the moisture content of the sweet potato you used.
