Ingredients

  • 2 lb very ripe tomatoes, halved
  • 3 garlic cloves, minced
  • 2 tsp fresh or dried thyme leaves
  • Salt and pepper, to taste
  • ¼ cup extra virgin olive oil
  • Crumbled goat or sheep feta cheese to top, optional

Method

  1. Preheat the oven to 450 degrees F.
  2. Place the tomato halves in a large bowl. Add the minced garlic and thyme, and spices. Drizzle the olive oil on top. Toss the tomatoes to coat them well.
  3. Transfer the tomatoes to a baking tray, flesh side up. Top with salt and pepper.
  4. Roast in the oven for 30 to 35 minutes or until the tomatoes are roasted to your liking.
  5. Serve as a side dish, sprinkled with feta cheese.
