Thyme and Garlic Roasted Tomatoes
Ingredients
- 2 lb very ripe tomatoes, halved
- 3 garlic cloves, minced
- 2 tsp fresh or dried thyme leaves
- Salt and pepper, to taste
- ¼ cup extra virgin olive oil
- Crumbled goat or sheep feta cheese to top, optional
Method
- Preheat the oven to 450 degrees F.
- Place the tomato halves in a large bowl. Add the minced garlic and thyme, and spices. Drizzle the olive oil on top. Toss the tomatoes to coat them well.
- Transfer the tomatoes to a baking tray, flesh side up. Top with salt and pepper.
- Roast in the oven for 30 to 35 minutes or until the tomatoes are roasted to your liking.
- Serve as a side dish, sprinkled with feta cheese.
