Ingredients

  • 1 cup dried apricots
  • 1 cup lightly toasted walnuts
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon chia seeds
  • 1 teaspoon tahini

Method

  • Place the walnuts and apricots into a food processor and process until smooth.
  • Remove from the processor and place into a bowl.
  • Add the coconut, tahini and chia seeds with your hands and then roll the mixture into balls.
  • Store in the fridge.
