Walnut And Coffee Energy Balls
Makes 10 balls
Ingredients
- 1 cup walnuts
- 1 cup Medjool dates
- 1 teaspoon instant or brewed coffee mixed with 50mL boiling water
- 1 teaspoon chia seeds
- ½ tsp vanilla extract
Method
- Process the walnuts in a food processor until they become like wet sand.
- Add the dates and continue to process until the mixture is combined.
- Add the coffee mix and the vanilla extract and process briefly until just combined. Remove the mixture from the food processor and add the chia seeds with your hands.
- Shape the mixture into balls and place in the fridge in a sealed container.
- Serve as a snack or dessert.
