Makes 10 balls

Ingredients

  • 1 cup walnuts
  • 1 cup Medjool dates
  • 1 teaspoon instant or brewed coffee mixed with 50mL boiling water
  • 1 teaspoon chia seeds
  • ½ tsp vanilla extract

Method

  1. Process the walnuts in a food processor until they become like wet sand.
  2. Add the dates and continue to process until the mixture is combined.
  3. Add the coffee mix and the vanilla extract and process briefly until just combined. Remove the mixture from the food processor and add the chia seeds with your hands.
  4. Shape the mixture into balls and place in the fridge in a sealed container.
  5. Serve as a snack or dessert.
