Serves 2 as a side dish

Ingredients

  • 2 large handfuls green beans
  • 1 cup cherry tomatoes, halved
  • 1 large handful arugula or torn lettuce of your choice
  • 1 stalk celery, sliced
  • ⅓ cup cubed feta cheese
  • ¼ cup chopped roasted pecans
  • 2 tablespoons olive oil
  • 2 tablespoons vinegar of your choice

Method

  1. Boil or steam the green beans until they have softened to your liking.
  2. Arrange all other ingredients in a bowl except the oil and vinegar.
  3. Slice the beans and add them to the bowl. Pour oil and vinegar on top, toss and serve.
