Warm Green Bean Salad
Serves 2 as a side dish
Ingredients
- 2 large handfuls green beans
- 1 cup cherry tomatoes, halved
- 1 large handful arugula or torn lettuce of your choice
- 1 stalk celery, sliced
- ⅓ cup cubed feta cheese
- ¼ cup chopped roasted pecans
- 2 tablespoons olive oil
- 2 tablespoons vinegar of your choice
Method
- Boil or steam the green beans until they have softened to your liking.
- Arrange all other ingredients in a bowl except the oil and vinegar.
- Slice the beans and add them to the bowl. Pour oil and vinegar on top, toss and serve.
